He said it passed quality control. I didn’t know (certain) cars could be fully built in 2 days. Maybe I’m used to hearing months/years. Is this a “normal” car?!

Most likely. Even cars like a corvette or possibly even a boxster/cayman/911 can easily be stamped out in a day. His AMG merc had a hand assembled engine and other extra parts so that probably took some time to get it all together. But my Fiesta ST, once the parts were in place, was assembled with a bunch of other Fiesta STs in the same week. They need to be able to make many a day to be profitable.
